Cranberry-Coconut Sweet Potato Casserole

Ingredients:

  • 4 large sweet potatoes, peeled and cubed

  • 1/4 cup of coconut milk

  • 2 tablespoons of maple syrup

  • 1/2 teaspoon of salt

  • 1/4 teaspoon of cinnamon

  • 1 cup of fresh or dried cranberries

  • 1/2 cup of shredded coconut

  • 1/4 cup of chopped pecans (optional)

  • 2 tablespoons of brown sugar

  • 1 tablespoon of coconut oil, melted

Instructions:

  1. Preheat your oven to 375°F (190°C).
